Ingredients: 4 extra large or jumbo size eggs 2 cups heavy cream 1/8 tsp. black pepper 2 drops Tabasco sauce 3/4 tsp. salt 1/4 tsp. powdered nutmeg 1/4 tsp. sugar 1/8 tsp. cayenne pepper 1/4 - 1/2 cup cooked vegetables 1/4 - 1/2 cup diced breakfast meat 1/2 lb. shredded swiss cheese Instructions: Preheat Oven to 425 degrees F. Blend eggs, cream and spices together until thoroughly mixed. Spray 4 two-cup Corningware Baking Dishes with Pam. Add desired vegetables and breakfast meat to each dish. Top with Swiss Cheese and egg mixture. Place in oven for 15 minutes and then turn heat down to 300 degrees F and bake for 20 more minutes. The Quiche is done when a knife inserted into the center comes out clean. At Abigail’s we prepare the egg mixture and fill the Corningware dishes the night before. In the morning we re-blend the egg mixture and pour it into the vegetables, meat, and cheese and stir gently to make sure the egg mixture gets into all the spaces. We use fresh steamed vegetables such as broccoli, spinach, squash, onions, mushrooms, peppers, asparagus, etc. For meats we use, bacon, ham, or sausage. |
