Cinnamon Mornings and Chocolate Dreams

Yield: 5 dozen 

Ingredients:
4 1/2 cups unbleached flour or whole wheat flour
2 tsp. baking soda
1 tsp. sea salt
2 cups unsalted butter, softened at room temperture
1 1/2 cups packed brown sugar
1 cup granulated sugar
5 tsp. pure vanilla extract
2 large eggs
4 cups semi-sweet chocolate chips
2 cups chopped walnuts or pecans (optional)

Instructions:
Preheat oven to 375 degrees. In small mixing bowl, stir together flour, baking soda and salt. Set aside. In large mixing bowl, cream butter and sugars together until light and fluffy. Add vanilla and egg. Beat well. Add dry ingredients to creamed mixture. Mix well. Add chocolate chips (and nuts, optional). Mix well. Roll a heaping teaspoon of dough into a ball and place each ball 2" apart on ungreased cookie sheet. Bake for 10-12 minutes until lightly brown. Remove from oven immediately and place cookies on cooling rack.

These special homemade chocolate chip cookies are served each evening in the parlor of the Camino Hotel~Seven Mile House, along with French roast coffee and tea. They are especially delicious when paired with a glass of Port from Jodar Winery and Vineyards onsite Wine Tasting Room.
