Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
1 green pepper, diced
1 small onion, diced
12 medium mushrooms, sliced
1 large ripe tomato, diced
8 ounces lean ham, diced
4 - 8" tortillas
8 ounces refried beans
8 ounces shredded cheddar cheese
8 eggs
8 ounces salsa (mild or medium)
4 ounces sour cream
8 medium pitted black olives

Instructions:
Saute first 5 ingredients until tender, using olive oil or butter flavored vegetable oil. In the meantime, fold tortillas in half and spread 2 ounces refried beans on each tortilla. Top with 2 ounces cheese and place under broiler until cheese is melted and tortillas are slightly brown. Top with sauted ingredients. Fry eggs over easy; place two eggs on top of each tortilla. Top with warm salsa, sour cream and 2 olives.
