Ingredients: 4 (8" or 10") flour tortillas, unrefrigerated 4 ounces sharp cheddar cheese 2 medium size mild roasted green chilies, diced 1 small onion, chopped 6 large eggs, beaten 1 teaspoon mustard flour 1/2 teaspoon fresh ground black pepper Pinch of salt (optional) Instructions: Preheat oven to 375 F. Lightly spray jumbo muffin pan with non-stick spray. Fold tortillas to fit muffin hole (somewhat like an inverted cone with a flat tip). Place 1/2 ounce cheese in each cone. Distribute chilies and onion evenly in each cone. Beat eggs; add mustard flour, pepper and salt. Pour egg mixture into each cone; toss remaining cheese on top of each cone. Bake for 45-50 minutes until edges of tortillas are dark golden brown. |
