Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup flour
1 cup whole wheat flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup quick cooking oats
1 tsp cinnamon
1 egg, beaten
1 cup milk
3 tbsp molasses
1/2 cup vegetable oil
1/2 cup golden raisins 1 carrot, grated
1/2 cup packed brown sugar

Instructions:

Preheat oven to 400 degrees. Line 12 muffin cups with paper liners or spray with cooking oil spray. Sift flours, baking powder, salt, oats and cinnamon together in a large bowl.

In a separate bowl, mix egg, milk, oil, raisins,carrot and brown sugar together. Add egg mixture to flour mixture, stirring just until all ingredients are mixed.

Divide batter among 12 muffin cups. Bake for 15 to 20 minutes, until golden brown on top and a knife comes out dry. Cool. Serve with softened cream cheese or orange marmalade.
