Ingredients: 3 large eggs 1 cup sugar 1/4 cup fresh lemon juice 1 teaspoon grated lemon zest Dash salt 2 tablespoons butter Instructions: Using an electric mixer, beat eggs with sugar until mixture is thick and pale yellow. Beat in remaining ingredients. Pour into a double boiler and cook over simmering water, stirring periodically until mixture is slightly thickened and coats a spoon (about 15 minutes). Serve warm or cooled. Serve with gingerbread waffles. |
