Ingredients: Mix: 2 cups flour 1 cup sugar 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt In Separate Bowl Mix: 1 1/2 cups shredded carrots 1 1/2 cups fine chopped apples (2 or 3 apples) 1/2 cup coconut 1/2 cup raisins 1/2 cup nuts 3 eggs 2/3 cup oil 1/2 tsp. vanilla Combine all, place in muffin tins, and bake at 375 F for 18-20 Minutes.
