Ingredients: 2 scallions, minced 1 garlic clove, minced 1 tablespoon olive oil 4 large eggs 1 tsp. fresh thyme leaves, minced or 1/4 dried 1 tablespoon minced fresh parsley leaves 1/4 pound of chopped ham 1/3 cup grated extra-sharp Cheddar cheese (about 2 ounces) Instructions: This is a weekly breakfast entrée served at Somerset and one that guests love and is easy to prepare - may be doubled or tripled, depending on the number of people you are serving. This is best baked in a cast iron skillet. Bake in a 375 degree oven until eggs are set. In an 8-9 inch skillet cook scallion and garlic in oil over moderately low heat, stirring, until softened. In a bowl whisk together eggs and seasonings. Add egg mixture to scallion mixture and cook, without stirring for 2 minutes. Add ham, sprinkle cheddar cheese and bake until set. May also broil until top is set. |
