Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/3 cup sugar

Combine these 5 ingredients.

Cut in 6 tbsp. butter (cold)

Combine 1 egg
1/2 cup buttermilk
1 1/2 tsp. vanilla

Add to dry mixture and stir till all is well mixed. Drop by Tbsp. on parchment lined cookie sheet. Bake at 400 degrees for 12-15 minutes. Serve with butter and jam or Lemon Butter.

Lemon Butter:
1 stick butter
4 eggs
Pinch of salt
2 cups sugar
3 lemons (juice and peel)

Instructions:
Melt butter in top of double boiler. Beat eggs with pinch of salt. Beat in sugar slowly till dissolved and eggs are lemon colored (5-8 mins.) Add juice and peel. Beat several minutes. Cook & stir till thick. Store in glass jars in the refrigerator. Will keep for several weeks. Use on scones, muffins, coffeecakes, and to fill tart shells.
