Ingredients: Pam (or similiar vegetable spray) 6 large (2 egg) ramekins 3 tsp. maple syrup 3 slices bacon - cooked until crisp, crumbled (optional) 12 large eggs Salt and freshly ground black pepper Instructions: Preheat oven to 400F. Spray ramekins & drizzle with 1/4 tsp. maple syrup in bottom. Sprinkle bacon bits into each ramekin.Gently break two eggs into each ramekin. Top with 1/4tsp. maple syrup. Add salt & pepper to taste. Fill 2 in. deep baking tray with ½ inch of water. Place ramekins in water bath. Cover with foil. Bake for 1 hour at 400F or until eggs are set. Run knife around sides of ramekins to release and serve on buttered toast, seasoned greens and garnish. This is a great dish to make for a large group. Capacity is only limited by the size of waterbath pan and oven. |
