Ingredients: 1 cup flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 slightly beaten eggs 1 cup sour cream or yogurt 4 T melted butter (cooled) 1/4 C milk* 1 C blueberries (Maine preferred) *If low or non-fat cream/yogurt used, reduce the amount of milk. Instructions: Mix dry ingredients together. Add eggs, sour cream, butter, and milk, beating until just smooth. Ladle pancakes onto 325 degree griddle. Sprinkle blueberries generously onto each pancake. Cook until bubbles begin to appear. Turn, cook until golden and done through. Serve on warm plate, sprinkle with confectioner's sugar, accompany with warm maple syrup. |
