Cinnamon Mornings and Chocolate Dreams

Yield: 5 dozen 

Ingredients:
1 pound cold butter, diced
4 tablespoon sugar
4 eggs and 1 egg yolk (reserve white of egg)
1 cup maple syrup
3 1/2 cups white flour
1 cup whole wheat flour
2 teaspoon salt
2 tablespoon baking powder
1/4 cup plain yogurt
1 cup quick cooking oats

Instructions:
1. With electric hand-beater mix together diced butter, sugar, eggs and maple syrup. Beat until fluffy.

2. In separate container, mix together by hand, white and wheat flour, salt and baking powder.

3. Add flour mixture to the butter mixture and stir thoroughly by hand.

4. Fill in the yogurt.

5. Add oatmeal.

6. Using an ice cream scoop, fill 3/4 full, and place on ungreased cookie sheet.

7. Make topping, which consists of beaten egg white with 1 teaspooon of maple syrup.

8. Brush topping on tops of scones, then sprinkle with white sugar.

9. Bake in preheated convection oven @ 375°F for 15 minutes. Watch for brownness on top.
