Cinnamon Mornings and Chocolate Dreams

Yield: 12 servings 

Ingredients:
60 minute preparation time (including 45 minutes baking)
Oven temperature: 375 F
Small sauce pan
13x9" baking pan

6 pears
12 tbsp. butter (cut in 12 pieces)
12 tbsp. brown sugar
Nutmeg
1/2 cup brandy
1/2 cup water
1/2 cup heavy cream
Fresh mint



Instructions:
Cut pears in half, core and remove stems. Place cut side up on a baking sheet. Place one piece of butter and one tablespoon of brown sugar on each pear half. Sprinkle lightly with nutmeg. Sprinkle with brandy and pour water into the bottom of pan. Cover with foil and bake for 45 minutes (until pears are tender but not mushy).

Drain pears into saucepan and place on warm serving platter. Scrape juices and "caramel" from baking pan into saucepan. Begin to warm juices over medium heat. Add heavy cream, stirring constantly until sauce is thickened and caramel color.

Place pear half (cut side down) on plate. Spoon small amount of caramel sauce over pear. Place sprig of fresh mint at small end of pear to resemble leaves. Serve warm.
