Cinnamon Mornings and Chocolate Dreams

Ingredients: Crust: 2 1/2 cups graham cracker crumbs (Chocolate) 1/3 cup unsalted butter -- melted 1/2 cup sugar Filling: 2 pounds chevre cheese -- fresh 1 1/2 cups sugar 2 eggs 1/4 cup Grand Marnier 1 teaspoon vanilla 8 ounces semisweet chocolate chips Instructions: Heat oven to 350 F. Crust: Blend first 3 ingredients well. Press into a 9" spring form pan - covering bottom, and 1-1/2 " up the sides of the pan. Bake 10 minutes at 350 F until set. Cool Filling: Cream cheese and sugar until smooth. Add eggs one at a time, and continue mixing. Add liqueur and vanilla and blend well. Melt chocolate in a double boiler, then gradually add to filling mixture. Pour filling into crust, and bake in oven at 350F for 30 minutes. Reduce oven temperature to 325 F and continue baking for 20 minutes. Reduce temperature to 300 F and bake another 15 minutes or until done. Cool overnight. Serving Ideas : Garnish with fresh or frozen red raspberries NOTES : Cheesecake is done when filling doesn't jiggle when pan is moved slightly. |
