Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 loaf white bread (see note)
8 large eggs
1 Tbsp. vanilla extract
1/8 tsp. almond extract
3/4 tsp. salt
3 Tbsp. sugar
3 cups milk (2% is OK)
1 cup chopped pecans
2 tsp. butter or "pam"

Syrup: dilute orange marmalade or fruit jam with water or fruit juice and warm in microwave oven

Extras: Powdered sugar for dusting; sliced fresh fruit for garnish; maple syrup for "traditionalists."

Instructions:
"Although this recipe is fairly standard, the different toppings, garnishes, table setting and flourish of presentation always make this a special treat for our guests. We often change the topping from orange sauce to strawberry sauce or a sauce made from a jam from our Loquat tree, since all these fruits are grown in this area. The decision depends on the fruit in season, what's available and at hand or on our mood that day. Likewise we've found that by breaking the bread in pieces we can now mix different breads together. Mixing adds to the flavor and variety. White bread with pieces of rye or pumpernickel or pieces of French bread always goes over well. Mixing breads is also a way to put to use those good leftover ends that might otherwise get thrown out."

Butter (or "pam") 10" x 15" x 2" glass pan. Break bread into approx. 1" square pieces. Fill pan with bread pieces. Beat eggs with vanilla, salt, sugar, almond and milk and pour over bread. Gently fold liquid into bread being careful not to overwork. Level mixture and top with chopped pecans Cover with plastic wrap and refrigerate 4 to 36 hours. Uncover and place in cold oven. Bake at 350 degrees for 45-55 minutes, being careful not to burn pecan topping. Cover top with foil last few minutes if center isn't dry when tested and pecans are golden brown.
Let stand 5 minutes before serving. Sprinkle top with powdered sugar and drizzle on sauce for extra flair. Garnish plate with slices of orange, ripe strawberries, etc. Serve with small pitcher of extra sauce and/or maple syrup.

Notes:
1. Other types of breads and rolls may be added to white bread. Each will add to the variety and taste.
2. Walnuts may be substituted for pecans.
