Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
1 cup flour
1 cup wheat flour
1/2 teaspoon salt
3/4 teaspoon baking powder
1 tbsp. sugar
1/2 tsp. cinnamon
1 1/2 cups buttermilk
1/2 tsp. baking soda
1 egg, well beaten
1 tbsp. butter, melted
1 cup grated tart apple
1/2 cup chopped pecans

Instructions:
Mix together flours, salt, baking powder, sugar and cinnamon in a large bowl, stir to blend.

Combine buttermilk with baking soda in a medium bowl; add egg and butter; mix well. Add to flour mixture; stir quickly to blend. Fold apple and pecans into mixture. Pour pancakes, approximately 3 inches in size, on greased hot griddle and fry until brown on both sides.

Serve with warm maple syrup.
