Ingredients:
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup milk
1/2 cup canola oil
1 1/2 teaspoons grated lemon peel
Lemon Glaze (recipe below)

Instructions:

In a large bowl, stir together flour, sugar, baking powder and salt. In a small bowl, lightly beat eggs, then beat in milk, oil, and lemon peel. Add liquid mixture to flour mixture and stir just until blended. Pour batter into a greased 5 by 9-inch loaf pan. Bake at 350 degrees until a wooden pick inserted in center comes out clean (40 to 45 minutes). When loaf is done, use a wooden skewer or similar tool to poke numerous holes all the way to the bottom. Prepare Lemon Glaze; drizzle hot glaze evenly over loaf, letting it soak in slowly. Let cool in pan on a rack for 15 minutes; turn out onto rack and let cool completely.

Lemon Glaze: In a small pan, combine 4 1/2 tablespoons lemon juice and 1/3 cup sugar. Stir over medium heat until sugar is dissolved.
