Cinnamon Mornings and Chocolate Dreams

Ingredients: 8 large eggs 1/2 cup water 3 tbsp. butter 3/4 cup diced sweet red pepper 3/4 cup sliced fresh mushrooms 1/2 cup diced lean ham (optional) 1/2 tsp. salt 1/4 tsp. black pepper (freshly ground if possible) 1 tsp. mixed Italian herb seasoning 1/2 cup grated parmesan cheese Instructions: Whisk egg and water together. In 10" skillet, melt butter over medium heat. Add vegetables and cook for five minutes. Add ham and seasonings and cook for another 3 minutes. Pour egg mixture over all. DO NOT stir. Cover and cook over low heat until ALMOST set, about 8-10 minutes. Uncover, sprinkle with cheese and put under oven broiler until lightly browned - about 2-3 minutes. Note: cover skillet handle with foil if it isn't metal. Cut frittata into wedges, garnish with Italian parsley and cherry tomatoes. |
