 Ginger Melon Recipe

Yield: 4 servings 

Ingredients:
1/2 cantaloupe
1/2 honeydew melon
2 to 4 Tbsp crystallized ginger
1 to 2 Tbsp honey
1 1/2 tsp lime juice
Mint leaves

Instructions:
Seed and skin melons chopping the melon into bite-sized pieces and place in a large bowl. Finely chop the ginger and add to the melon. Combine honey and lime juice and microwave/heat just enough to make the honey runny. Pour over melon/ginger mixture and toss to coat. Refrigerate for at least one hour.

Before serving, toss again to be sure the honey mixture and the ginger are well mixed with the melon. Spoon into individual serving bowls being sure to spoon the juice left in the bottom of the mixing bowl. Garnish with mint leaves and serve!

This is a simple but cool and refreshing way to start your day! It is also good for a light lunch along with crusty bread and a glass of white wine!
