Cinnamon Mornings and Chocolate Dreams

Yield: 5 servings 

Ingredients:
1 1/2 c. flour
1 c. old fashioned rolled oats
1 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 c. nonfat buttermilk
2 tbsp brown sugar or honey
1 egg + egg substitute = 2 eggs
4 tbsp oil
2 medium apples grated

Instructions:
Make 4-6 waffles of 10-12 pancakes. Mix flour, oats, baking powder, cinnamon, baking soda, salt and nutmeg. Add buttermilk, brown sugar or honey, eggs, egg substitute, and oil. Mix all together by hand, using as few strokes as possible, then gently folk in the grated apple.

Batter should be thick. Let batter sit for 1 hr. before using. Bake in a preheated waffle iron until done. Also good topped with warm, homemade chunky applesauce in the winter.

We like to serve Maloy's special waffles with fresh strawberries from the garden!
