Cinnamon Mornings and Chocolate Dreams

Ingredients:
3/4 cup granulated sugar
3/4 cup brown sugar
2/3 cup oil
1 egg
2 1/2-3 cups flour
1 tsp. Baking soda
1/2 tsp salt
1 cup sour cream
1 tsp. Vanilla
1 1/2-2 1/2 cups diced rhubarb
1/2 cup chopped pecans

Topping:

Combine into fine crumbs:
1/2 cup brown sugar
1/2 tsp. Cinnamon
1-2 TBS butter or margarine

Instructions:
Mix together thoroughly sugars, oil and egg. Sift together flour, soda and salt. Combine sour cream and vanilla. Alternately add dry ingredients and sour cream mixture to sugar mixture. Blend in rhubarb and nuts. Pour into 2 medium bread pans, which have been greased and floured. Sprinkle with topping (Recipe below).

Bake 350 degrees Fahrenheit, 55-60 minutes. Cool 10 minutes before removing from pans. Slice and serve.
(May also be baked in a bundt pan and served as coffee cake)
