Ingredients: Batter: 2 cups flour 1 cup granulated sugar 12 oz. cran-orange** 1/2 tsp. salt 1/2 cup butter, soft 2 1/2 tsp. baking powder 2 eggs 1/2 cup chopped pecans 1/2 cup orange juice ** Blend one whole orange, including peel, in processor. Stir in one can of whole cranberry sauce. Use 1 - 1 1/2 cups. Okay to freeze extra. Topping: Mix with pastry blender: 1/2 cup granulated sugar 1/2 cup flour 2 tsp. cinnamon 2 tbsp. melted butter Instructions: Mix batter ingredients in a bowl. Spoon into greased or Pammed cupcake tins until about 3/4 full. Sprinkle the top of the batter in each section with topping mix. Bake 15 to 20 minutes at 350 degrees or until light golden brown. |
