Ingredients: 2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoon baking powder
3/4 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 egg
1-2 cup well drained berries
Streusel Topping: Mix 2/3 cup brown sugar (packed), 1/2 cup flour, 1 teaspoon cinnamon and 6 tablespoons firm butter until crumbly.
Raspberry Sauce to be served on the side or drizzled on top.
In a food processor or blender, process 1 (10 ounce) package frozen raspberries in syrup, thawed, with syrup, until smooth. If desired strain to remove seeds. In small saucepan, combine 3 tablespoons sugar & 1 teaspoon cornstarch; stir in raspberry puree. Cook & stir on medium heat until it boils & thickens. Cool to room temperature.
Instructions: Heat oven to 325°F. Grease round layer pan 9x1-1/2" or square pan, 8x8x2 or 9x9x2". Blend all ingredients except topping and blueberries or raspberries; beat vigorously 1/2 minute. Fold in berries. Spread in pan. Sprinkle topping over batter and use a fork to poke & twist topping down into batter. Bake 25-30 min or until wooden pick inserted in center comes out clean. Serves 8-12.
