Cinnamon Mornings and Chocolate Dreams

Ingredients:
12 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Dijon-style mustard
1/2 pound thinly sliced ham
1/2 pound thinly sliced Swiss cheese
1 cup chopped scallions with tops (about 1 bunch)

Instructions:
Preheat the oven to 350 degrees. Lightly grease a 10 by 15-inch jelly roll pan, and line it with greased wax paper. Combine the eggs, salt and pepper, beating well. Pour the mixture into the prepared pan and bake for 10 to 15 minutes, or until the omelet is set. When the eggs are done, invert them onto a piece of foil and gently peel off the wax paper. Spread a thin layer of mustard on the baked eggs. Layer with thinly sliced ham and Swiss cheese and top with the chopped scallions. Roll up the omelet jelly roll fashion and wrap it tightly in foil. Place the roll on a cookie sheet and return it to the oven for 10 minutes. Remove the foil, slice the omelet roll, top with Hollandaise sauce and serve.
