 Scottish Pancakes Recipe

Yield: 4 servings 

Ingredients:
1 1/2 cups uncooked quick oats
2 cups buttermilk
1 1/2 tsp. sugar
1 tsp. baking soda
1 tsp. salt
1/2 cup all-purpose flour
2 whole eggs, beaten

Instructions:
Preheat electric griddle or frying pan to 350 degrees. Mix oats and buttermilk together in a bowl and let stand for 5 minutes. Combine dry ingredients and add to the oat mixture. Add beaten eggs, mixing well. Spoon onto lightly oiled griddle. Brown first side and then flip once only. Remove from grill when golden brown.
