Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
1-1/4 cup flour
2 tsp baking powder
1/2 tsp salt
1 cup oat bran
1/2 cup sugar
2 eggs beaten
3/4 skim milk
2 tbsp vegetable oil
3 medium sized apples, cut in small pieces
1 cup fresh or frozen blueberries
1/4 cup chopped walnuts or pecans

Instructions:
Preheat oven to 425 degrees. Sift flour, baking powder, and salt into bowl and add oat bran and sugar. Stir well to combine. In a separate bowl, beat eggs, milk, and oil. Pour over dry ingredients. Stir only briefly. Add blueberries, apples, and nuts; stir briefly again. Do not overwork - lumps in flour will show. Fill muffin cups nearly to the top. Bake 20 minutes. (You can substitute any fruit or berries for the blueberries.)
