Ingredients: Cookies 1 3/4 cups flour 1 1/2 cups sugar 3/4 cup butter 2/3 cup unsweetened cocoa 3/4 teaspoon baking soda 1/4 teaspoon salt 2 eggs 2 tablespoons half and half 1 teaspoon vanilla extract Filling: 1/2 cup butter 1/2 cup brown sugar 1/4 cup light corn syrup 1 cup coconut toasted 1 cup pecans chopped Instructions: Combine all cookie ingredients and blend. Form in 1 inch balls and place on ungreased cookie sheet. Bake 8-9 minutes at 350. In medium saucepan, melt butter, add sugar and syrup stirring constantly until thick and bubbly. Stir in coconut and pecans. Make cookie sandwiches with 2 cookies and filling. |
