Cinnamon Mornings and Chocolate Dreams

Ingredients:
¾ cups flour
¼ teaspoon salt
½ cup unsalted butter
1 cup plus 2 Tbsp sugar
2 Tbsp instant espresso powder
½ tsp baking powder
1 package (12 oz) semi sweet chocolate pieces
3 squares (1 oz each) unsweetened chocolate
3 eggs

Instructions:
Preheat oven to 350 degrees. Mix flour, baking powder and salt in small bowl. Melt half of semi sweet chocolate, the unsweetened chocolate and butter in top of double boiler, stir until smooth. Beat sugar, eggs and espresso on high speed in bowl until ribbony, 3 minutes. Fold in melted chocolate. Stir in flour mixture. Fold in remaining chocolate pieces. Drop batter 1 tablespoon per cookie, 2 inches apart on greased baking sheets. Bake for 12 minutes until puffed and crackly. Cool slightly on sheets. Transfer to racks to cool.
