Cinnamon Mornings and Chocolate Dreams

Yield: 1 loaves 

Ingredients:
1 Tbsp yeast
1 cup warm water
1/2 cup sugar
1 tsp vanilla
1 tsp salt
1 lemon
1/4 cup canola oil
2 eggs and 2 yolks
4 1/2-5 cups flour
1 cup golden raisins

Instructions:
Dissolve yeast in warm water. In a medium bowl, mix together salt, sugar, eggs, vanilla, lemon rind and lemon juice. Stir in dissolved yeast. Set aside.

Measure 4 cups flour into a large mixing bowl. Add liquid mixture stirring well. Add raisins. Knead dough until smooth and silky, adding more flour as needed (10-15 minutes). Place dough in an oiled bowl, cover, set in a warm place and let rise until doubled in size. When doubled, place in a greased coffee can. Let raise until doubled again. Bake for 35 minutes.
