Ingredients: 2 cups flour ½ cups sugar 1 Tbsp baking powder 1 tsp salt ½ tsp soda ½ tsp cinnamon ½ tsp ground nutmeg Dash of ground mace 1 egg, slightly beaten 1 (8oz) ctn. Peach yogurt 1/3 cup milk 1/3 cup oil ½ cup finely chopped dried peaches Crunch Topping: 2 Tbsp flour 2 Tbsp brown sugar 2 Tbsp chopped walnuts ½ tsp cinnamon 2 Tbsp butter Instructions: Preheat oven to 400. Grease bottoms of 12 muffin cups; set aside. In a medium bowl, mix flour, sugar, baking powder, salt, soda, and spices. In a small bowl, mix egg, peach yogurt, milk, and oil. Make well in center of flour mixture; pour egg mixture and chopped peaches into well. Stir just until mixture is moistened; batter will be lumpy. Spoon batter into muffin cups, filling 2/3 full. Crunch Topping: Combine all ingredients and sprinkle about 2 teaspoons over each muffin. Bake for 20 to 22 minutes of until golden brown. Serve warm. |
