Cinnamon Mornings and Chocolate Dreams

Yield: 7 servings 

Ingredients:
12 thin slices fresh bread
9 tbsp. melted butter
12 eggs
1 recipe nippy cheese sauce

Nippy Cheese Sauce:
3 tbsp. butter
3 tbsp. flour
2 cups whole milk
1/2 tsp. salt
1/8 tsp. pepper
2 tsp. Worcestershire sauce
Dash hot pepper sauce
Dash cayenne pepper
2 cups shredded cheddar cheese

Instructions:
Trim crust from bread and brush both sides of each slice with melted butter. Press gently into 3" muffin tins. Bake at 350 degrees 10-15 minutes until lightly browned. Break an egg into each toast cup. Bake at 350 degrees 15-20 minutes until eggs are set. Serve with nippy cheese sauce.


Nippy Cheese Sauce:
Melt butter in upper part of double boiler over low heat. Add flour; blend together. You will save time if you heat half the milk. Add cold milk first; blend; stir in hot milk, sauces and cayenne pepper. Cook till thick and smooth, stirring constantly. (Water shouldn't touch top pan.) Add salt and pepper. Cover; cook 5-8 minutes. Turn off heat; add cheese and let stand until cheese is melted. Stir enough to blend.
