Ingredients: 12 eggs, beaten ½ cup flour ¼ cup milk 1 teaspoon baking powder ¼ teaspoon salt, optional 2 cups cooked cubed ham or cooked sausage, optional 2 cups shredded Monterey Jack cheese 2 cups shredded Cheddar cheese 1 cup small-curd, low-fat cottage cheese Instructions: In a large mixing bowl, combine beaten eggs, flour, milk, baking powder and salt, mixing well. Add ham or sausage and cheeses. Stir in cottage cheese. Coat the bottom of 9x13 baking pan with vegetable oil spray. Spread egg mixture evenly in pan. Bake uncovered at 350 degrees for 40 to 50 minutes until puffy in the center and lightly browned, or until a knife inserted near the center comes out clean. Let stand five minutes before serving. Serves 12. Note: We prefer to leave the meat out of the casserole and to serve the meat on the side. That makes our vegetarian guests happy and allows others to eat as much, or as little, meat as they please. The casserole is delicious without the meat, too! |
