Ingredients: 3 cups flour 1/2 cup granulated sugar 2 tbsp. baking powder salt ¾ cup butter ¾ cup cream (coffee or whipping) 1 large egg ¾ cup toasted, chopped walnuts ¾ cup dried cranberries (craisins) ½ cup white chocolate chips, cut in half Instructions: Preheat oven to 325-350°F. In a large bowl, stir together the flour, sugar, baking powder and salt. Cut the butter into small cubes and distribute them over the flour mixture. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs. In a small bowl, stir together the cream and egg. Add the cream mixture to the flour mixture and stir to combine. Stir in the nuts, cranberries and chocolate. On a lightly-floured surface, cut dough into rounds using a cookie. Bake for approximately 15 minutes, or until the top is lightly browned and a toothpick inserted into the centre of a scone comes out clean. Remove the baking sheet to a wire rack and cool for 5 minutes. |
