Cinnamon Mornings and Chocolate Dreams

Ingredients:
Whites of 6 "extra large" eggs (at room temperature)
Yokes of 3 "extra large" eggs
1/4 tsp cinnamon
1/4 tsp nutmeg
3/4 cup milk (may use soy, rice or regular)
10-12 slices of raisen bread
(may use homemade wholewheat)thick slices ideal (1/2")

Instructions:
Mix the egg yolks with the cinnamon, nutmeg, and milk for a few minutes until very frothy. Meanwhile, with an electric mixer, beat the egg whites until stiff. Gently fold the egg whites into the egg yolk mixture. Dip the bread slices into the egg mixture and coat very thickly. Place in an 11"x13" glass dish. Cover the dish with saran wrap, and refridgerate until the bread is thoroughly soaked. (you can leave it 15 minutes or overnight).

Cook the bread slices (which are still thickly coated with egg mixture) in a large, hot, covered skillet. Serve immediately with fresh sliced strawberries & maple syrup or your favourite syrup & fruit.

*This actually tastes better if you leave it overnight which is great for a B&B owner!
