Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
3 ½ cup cooked wild rice, well drained
2/3 cup dried cherries (or dried cranberries)
4 tbsp sugar
4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 ½ cup buttermilk
4 large eggs
1/2 cup (1 stick) unsalted butter, melted


Instructions:
In a large bowl, toss wild rice and cherries. Add dry ingredients and continue to toss making sure rice and cherries are well coated. Separate eggs. Combine egg yolks and buttermilk. Add to wild rice mixture. Add melted butter. Beat egg whites and fold into batter. Ladle waffles onto preheated waffle iron and cook until golden brown and slightly crisp. Finished waffles may be kept warm in 200 degree F oven or in a warming tray while the remaining batter is prepared. Serve hot with whipping cream, fresh Alabama peaches (and/or other seasonal fresh fruits, such as, strawberries, raspberries, blueberries, pineapple, blackberries and bananas) and warm maple syrup. Makes 8 waffles.



Notes:
We prepare the rice ahead of time as directed on the package and freeze the portion size needed for each recipe.

Batter can be made several hours ahead and refrigerated. It also freezes well. Frozen batter may be thawed in the refrigerator one day
