Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1/2 c. granulated sugar
1/2 c. packed brown sugar
1/3 c. all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
7 c. sliced unpeeled tart cooking apples
2 pkgs. (12 oz. each) bulk seasoned pork sausage
1 c. sliced scallions (green onions)
1 pkg. prepared pastry crusts (2 per package)
1 egg yolk, beaten

Instructions:
Mix sugars, flour, cinnamon and nutmeg in a large bowl. Stir in apples; set aside. Cook sausage and scallions in 10" skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain and cool. Heat oven to 425^. Place one prepared pastry in pie plate pressing firmly against bottom and sides. Spread half of sausage mixture in plate. Cover with half of apple mixture; repeat layers. Cover carefully with remaining prepared pastry. Fold and roll top edge under lower edge, pressing rim to seal; flute. Cut several small slits in top crust to allow steam to escape. Brush lightly with egg yolk. Bake for 30 minutes. Reduce temperature to 350^ and bake about 30 minutes longer or until crust is golden brown.
