Ingredients: 1 Tbsp chopped green or red pepper 1 chopped green onion 2-3 eggs 1 Tbsp milk 1/8 cup fresh or frozen crabmeat 2 thin slices sharp cheddar cheese 1 tsp lemon-dill seasoning (plain dill weed is ok) Instructions: Soften pepper and onion in 5" microwave-safe bowl on high for about 1 minute. Add eggs and milk and mix. Microwave for approximately 1 minute per egg until almost set. Check eggs and stir at least once. Spread warmed crab and cheese slices on top. Sprinkle with seasoning and broil or heat until cheese melts. **It is very important not to overcook the eggs. |
