 Fresh Fruit Butter Recipe

Ingredients:
This is a melt-in-your-mouth butter that is great spread on piping hot muffins, pancakes, or waffles.

1/2 cup butter, softened
2 cups powdered sugar
1 egg yolk
1 cup sliced strawberries, peaches, plums, or pears
1/3 cup ground nuts (if desired)

Instructions:
In a small bowl, beat butter, powdered sugar, and egg yolk with electric beater on high speed until fluffy. In blender or processor, puree fruit. Slowly beat fruit into powdered sugar mixture with electric mixer at low speed; beat until smooth. Stir in nuts if desired. Makes about 2 1/2 cups.
