Ingredients:
Haddock Topped with Panko Bread Crumbs Ladden with Peeky-toe Crabmeat and Organic Thyme

4, 6-7 oz haddock filets
4 oz Peeky-toe crabmeat
1 cup Panko Japanese Bread Crumbs
2 Tbsp fresh organic thyme
1/3 cup olive oil
1/2 tsp lemon zest
Salt and pepper to taste

Instructions:
Pre-heat oven to 375º. In a bowl toss bread crumbs, thyme, crabmeat, olive oil and lemon zest, salt and pepper to taste. Divide bread crumb mixture into four portions, pat on top of haddock and bake 10-15 minutes just until the haddock begins to flake. Do not over bake. Serve immediately. Garnish with lemon wedge.
