 Pina Colada Muffins Recipe

Yield: 1 dozen 

Ingredients:
2 cups flour
1 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 stick margarine, melted and cooled
2 eggs, lightly beaten
8 oz low fat sour cream
1/2 tsp coconut extract
3 oz sweet grated coconut
1/4 cup chopped maraschino cherries
Small can crushed pineapple, drained well

Instructions:
Combine flour, sugar, baking powder, and salt; set aside. Combine and mix margarine, eggs, sour cream, coconut extract, coconut, cherries, and pineapple. Add to dry ingredients. Pour into greased muffin tins and bake at 375 degrees for 25-30 minutes.
