Ingredients: Recipe courtesy of Woods Hole Passage Woods Hole, MA Veggie Eggs Benedict Ingredients: pesto, homemade or store bought 1 Tbsp olive oil 4- 1/2" thick tomato slices 4- 1/2" eggplant slices 4 english muffins, halved 4 eggs Instructions: Brush tomato and eggplant slices with olive oil, roast/broil for 5 minutes, turning once. Lightly brush 1/2 muffin with pesto and toast. Poach eggs. To assemble, put 1/2 muffin on plate, stack tomato and eggplant on top of each. Carefully place one poached egg on each and drizzle with pesto. Serve other english muffin half. Serves 4. Instructions: |
