Cinnamon Mornings and Chocolate Dreams

Ingredients:
Crepes:
1 cup flour
1/4 cup sugar
1 cup milk
2 eggs
3 Tbsp melted butter
1 tsp vanilla
1/4 tsp salt

Filling:
16 oz cottage cheese
8 oz cream cheese
Blend cheeses with mixer. Store in large zipper baggie.

Topping:
Cherry preserves, heated in a pan

Instructions:
Mix together and make crepes in hot 6-inch skillet with about 3 Tbsp batter per crepe. Turn and cook, move to wire rack. Stack with waxed paper between and store in secure, plastic bag in refrigerator.

To serve:
Put two crepes on a 300 degree grill. Squeeze some cheese onto each crepe by cutting off a corner of the baggie. Roll up and roll a couple times on the grill to warm crepe and take the chill off the cheese mixture. Top with warm cherry preserves. Add dollop of whipped cream and mint sprig or other green leaf garnish.
