Ingredients: 12 North Carolina Golden Delicious apples, cut from the core 2 medium red onions, quartered 2 tbsp chopped fresh chives 2 tbsp chopped fresh parsley 1/4 cup vegetable or canola oil 1 tsp cinnamon 1/2 tsp mace 1/2 tsp allspice 1/4 cup rice wine vinegar 1/4 cup extra virgin oil 3 Tbsp chopped cilantro Instructions: Combine first 9 ingredients and toss well. Grill mixture of apples and onions. Do not overcook. Apples should be semi-firm, not mushy, and retain their texture. Cool mixture and then dice apples and onions (into small pieces) and add remaining ingredients. Season with salt and pepper to taste. Yields about a gallon of relish. Chef's notes: This tasty relish is perfect to serve with any grilled pork dishes. It can also be used as a colorful and festive fruit relish for holiday buffets and parties. Also excellent with freshwater fish. Enjoy! |
