Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Ingredients:
3 eggs - beat until frothy

Add:
2 cups sugar
1 cup oil
1 Tbsp vanilla
Beat until lemon colored about 3-5 minutes

Blend In:
2 1/2 cups flour
1 Tbsp cinnamon
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
2 cups coarsely grated zucchini

Fold in:
1 cup chopped walnuts

Instructions:
Bake in greased loaf pan, bundt or fluted pan at 350 degrees for 45 to 60 minutes depending on sizes of pans. It should still be a little moist in the middle when done. You may also bake in mini loaves, just adjust the baking time.
