Ingredients: 5 Fresh extra large eggs 1 1/2 cup Krusteaz Buttermilk Pancake Mix 1/2 cup water 1 tsp vanilla 1 tsp cinnamon 3 large apples (quartered, cored and crescent sliced) 1/2 lb butter for frying Instructions: In large bowl, add eggs, water and spices. Beat with hand mixer until well blended. Add pancake mix and stir by hand only until mixed. Melt approximately 2 Tbsp butter in non-stick frying pan. Laddle enough batter into frying pan to make 3 inch pancakes. Immediately lay enough apple slices on top of batter to cover entire pancake. Fry pancake until golden brown and slightly bubbly. Turn pancake and add new butter (only when needed! ) to prevent butter from burning. Continue to fry until golden brown and crusty. Serve apple side up. For next batch of pancakes, dispose of brown butter and wipe pan clean vith paper towel. Fry remaining pancake batter as above. |
