Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
3 cups flour
1 1/2 tsp baking powder
1 tsp salt
2 Tbsp sugar
2 egg whites
fresh grated peel from 1 orange
1 cup low fat milk
1 cup plain non fat yogurt
2 cups fresh blueberries



Instructions:
There are three secrets to this recipe; fresh orange peel, a hot griddle and adding the blueberries after the batter is on the griddle.

Mix batter ingredients and beat until smooth. Pour pancakes onto a hot griddle using about 1/4 cup of batter per pancake. Immediately sprinkle blueberries liberally over the pancakes. Turn when bubbles appear and sides begin to dry. Cook until second side is golden brown. Serve with real maple syrup or confectionery sugar. Forget the butter, these don't need it.
