Ingredients: 2 1/2 cups flour 2/3 cup sugar 3 tsp baking powder 1/2 tsp salt 1 cup milk 1/4 cup cooking oil 1/2 tsp vanilla 1 egg, beaten 2 cups finely chopped rhubarb Instructions: Spray/grease 18 muffins cups. In large bowl combine flour, sugar, baking powder and salt. Add milk, oil, vanilla and egg, stir just until dry ingredients are moistened. Gently fold in rhubarb. Fill cups 2/3 full. Bake at 400 degrees for 20-25 minutes, or until light golden brown. Remove from pan. Sprinkle warm muffins with powdered sugar. Serve warm. |
