Ingredients: 2 cups self-rising flour
1/2 cup wheat bran
1/2 cup brown sugar
1/2 tsp baking soda
1 tsp cinnamon
2 oz butter
1 Tbsp corn syrup (Karo dark)
1 egg
1 cup milk
3 kiwifruit
1/2 cup chopped walnuts
Instructions:
Toss first five ingredients in a bowl to mix. Heat butter and syrup until liquid (in second bowl). Add egg and milk and beat with a fork to mix. Peel and chop Kiwifruit into 1/2 inch cubes. Pour liquid mixture into dry ingredients. Add chopped Kiwis and walnuts. Fold together without over mixing. Spoon mixture into 12 medium muffin pans which have been sprayed with non-stick spray. Bake at 400 degrees F for 12-15 minutes.
