Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 clove garlic
1 tsp olive oil
2 tsp Valentina Salsa*
juice of 1 lime
1 medium mango
1 medium yellow pepper
3 stalks celery
3 medium roma tomatoes
salt & black pepper to taste

Instructions:
To chop mango:
First cut the fruit into thirds dividing it on either side of pit. Then cut narrow strips 1/8”– ¼” wide diagonally across both of the fleshy parts of the mango, crisscross narrow strips in the opposite direction. Finally after turning back the skin, cut fine slices across the diagonal cuts. There are many different varieties of mangos and all will work but I prefer the yellow ones with the small flat pit (manilla) because they have the best texture.

*If Valentina Salsa is unavailable you may substitute a drop or two of Tabasco salsa.
