Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 tablespoons melted butter
2 tablespoons flour
2 cups milk
1/4 cup chopped onion
salt and pepper to taste
1 cup shredded cheddar cheese
up to 1 cup crumbled, cooked bacon or ham (optional)
12 eggs beaten
1/4 - 1/2 cup sliced mushrooms
1 teaspoon of parsley
1/2 cup buttered bread crumbs
1 teaspoon paprika

Instructions:
Prepare white sauce using first 5 ingredients. Add cheese, stirring to melt and also add bacon. Beat eggs and saute in butter, scambling only until "set" (no more than half done). Add mushrooms and parsley. Combine all ingredients and freeze in a flattened, gallen zip-lock bag until needed.

Thaw egg dish for several hours. Transfer eggs to 12x7x2 buttered glass baking dish; top with butter bread crumbs and paprika and bake at 350 degrees for about 30 minutes. Serve hot.
